Winter Soup Maxine Canny 1 onion 1 clove garlic 1 rib celery 2 c. diced winter root vegetables (any combination of rutabaga, carrots, parsnips and potatoes) 2 c. chopped kale kale stock and water to make 1 quart handful of noodles 1/3 c. cooked beans, any variety 2 tsp. soy sauce 2 tsp. molasses 3 Tbsp. tomato paste 1 c. water 1 tsp. salt pepper to taste 1 bay leaf 1 Tbsp. basil 1 Tbsp. lemon juice Saute onion, garlic and celery in oil until soft. Add 1 quart water and chopped kale and cook until kale is somewhat tender. Add the rest of the vegetables, and the noodles. Bring to a boil. Combine soy sauce, molasses, tomato paste and 1 cup water. Add to soup with salt, pepper, bay leaf, basil and simmer covered for 30 minutes. Stir in lemon juice and adjust seasoning.
