Peach-Berry Cobbler Betty Poulin This is a wonderful combination of fruits. The topping is so good, I usually double the recipe...... Combine in saucepan: 1/2 c. sugar 1/2 c. brown sugar 2 Tbsp. cornstarch ADD: 1 c. water and cook over medium heat ADD: 2 Tbsp. fresh lemon juice 2 c. blueberries 4 c. sliced peaches Put into greased 8" X 8" baking dish. TOPPING: Sift together: 1 c. flour 1/2 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt ADD: 1/2 c. milk and 1/4 c. soft butter Beat topping ingredients until smooth. Spoon over fruit (It will be sticky.) Sprinkle with mixture of 2 Tbsp. sugar and 1/4 tsp. nutmeg. Bake at 375 for 40-45 minutes. Serve warm with heavy cream and dash of nutmeg. Best served warm.
