Crazy Pecan Pie Natalie H. Johnson 3 egg whites beaten stiff 1/2 tsp. baking powder 14 Ritz type crackers, coarsely crushed 1 c. sugar 2/3 c. chopped walnuts 1/2 tsp. vanilla Add baking powder to egg whites. Beat in sugar gradually, add flavoring. Fold in crackers and nuts. Put in greased 8" or 9" pie pan. Bake in a moderate (325) oven for 30 minutes. Cool slowly. When cool, cover with whipped cream and chill in refrigerator. Do not be surprised to see the pie fall in the middle while it is cooling; this is normal, but oh, is this good!
