Homemade Biscuit Mix Karen Rose Miller 3 c. white flour 2 1/2 c. whole wheat pastry flour ½ c. corn meal 3 Tbsp. baking powder 1 Tbsp salt 1 c. margarine or shortening Mix the flour, baking powder and salt, cut in margarine until particles are fine. Store in refrigerator. Use for coffee cake, muffins, pancakes, etc. Blueberry Streusel Shortcake Karen Rose Miller 1/4 c. margarine 2 c. homemade biscuit mix 1/2 c. milk Cut margarine into biscuit mix with pastry blender until mixture looks like coarse crumbs. Add milk. Stir with fork until dough forms. Spread in an 8" round pan. Combine: 1/4 c. biscuit mix 1/4 c. brown sugar 3 Tbsp. margarine 1/4 tsp. cinnamon Blend with a fork until crumbly and sprinkle evenly over top of dough. Bake at 400 degrees for 20 - 25 minutes. To serve: Cut in wedged and spoon hot blueberry sauce over shortcake. Blueberry Sauce: Heat together a No. 2 (2 cups) can blueberry pie filling, 2 Tbsp. lemon juice and 1/2 tsp. cinnamon.
