Mama's Baked Beans Ruth H. Turner 2 lbs. soldier beans, dry 1/2 lb. salt pork 1/2 lb. brown sugar or maple sugar salt to taste water Wash beans and soak overnight. Parboil for 2 to 2 1/2 hours or until skins crack when blown on. Add sugar, salt, and salt pork, which has been scored, on top. Put all this in a bean pot. Add water to cover. Bake at 350 for 2 hours. Then reduce heat to 300 or 275 and bake for 2 to 3 hours more, or until done. This recipe was Bernice Davis Turner's (1894-1970), a Saturday night favorite in our house. Then we would have them warmed up for Monday noon dinner. Monday was wash day and my mother didn't have time to cook. for dessert, we would have white rice cooled with raisins and maple syrup poured over the top.
